Appellation: Friuli Grave D.O.C.
Grapes: 100% Pinot Grigio
Per hectare yield: 50 liters from each 100 kilograms of grape
Harvest period: end of August, beginning of September, hand-picked grapes
Contents: Alcoholic content 12,5% vol. - Total acidity 6,30 g/l - Total solids 23,30 g/l
Ageing: 6 months on its own yeasts at 3/4° C with weekly batonnage
Vinification: after crushing and destemming, gentle pressing; static settling follows, then 25 days thermo-controlled fermentation at 10° C
Refining: 4 months in bottle
Colour: straw yellow color
Aroma: the nose is fruity and citrus, with some spicy accent
Taste: savory and soft, dry and well balanced, with a crisp acidity, which ends in an almond backward
Serving suggestions: baked, boiled, or fried fish with creamy sauces, fresh cheese, sole maunière. Venetian tradition: “moleche fritte”
How to serve: ideal at 8° C, in carré stems
