Per hectare yield:50 liters from each 100 kilograms of grape
Harvest period:end of August, beginning of September, hand-picked grapes
Contents:Alcoholic content 12,5% vol. - Total acidity 6,30 g/l - Total solids 23,30 g/l
Ageing:6 months on its own yeasts at 3/4° C with weekly batonnage
Vinification:after crushing and destemming, gentle pressing; static settling follows, then 25 days thermo-controlled fermentation at 10° C
Refining:4 months in bottle
Colour:straw yellow color
Aroma:the nose is fruity and citrus, with some spicy accent
Taste:savory and soft, dry and well balanced, with a crisp acidity, which ends in an almond backward
Serving suggestions:baked, boiled, or fried fish with creamy sauces, fresh cheese, sole maunière. Venetian tradition: “moleche fritte”
