Grappa is a uniquely Italian drink. Traditionally, made from pomace, the discarded grape seeds, stalks, and stems that are a by-product of the winemaking process and was originally made in Bassano del Grappa, a small village not so far from Roncadelle, and from this town this original elixir gets its name.
Grappa is a distilled beverage: that means the mixture of grape pieces and alcohol is heated gently, allowing much of the mixture to evaporate, and leaving a potent concentration through a discontinuous cycle: we put the grape-pomace into the cauldrons and we distill it using steam; after about three hours we unload the cauldrons and the cycle begins again.
But what plays the leading role in determining the taste of grappa is the hand of our master distiller. His job is to obtain and chose the best vine, combining his primeval passion for grappa and forty year’ experience with alembics and giving a drink that is worthy of the highest praise.
