pasta and beans

Dad loved a typical Italian food: pasta and beans. There are many recipes. Our mom Chiara prepared it by boiling the beans with onion, carrot, celery, garlic, salt, pepper, rosemary and olive oil for two, three hours.

Once cooked, she removed the rosemary, crumbled the rest in cream and served with homemade egg noodles.
Tip of the cook: set aside a portion of beans and stir-fry with oil and onion: they are an excellent side dish.
